The Sugarbeet Grower - RecipeIngredients:
2 cups flour 1 tsp. baking soda 1/2 tsp. Salt 2 tsp. baking powder 1 cup chopped dates 1/2 cup shortening 1 1/2 cup brown sugar 1/2 cup sugar 2 eggs (separate yolks and whites, will use both) 1 tsp. vanilla 3 tbsp. cold water 1 package chocolate chips 3/4 cup peanuts Directions: Sift together flour, baking soda, salt, and baking powder. Add chopped dates. Cream together shortening, 1/2 cup brown sugar, and sugar. Combine egg yolks and vanilla, add to creamed mixture. Add the wet mixture to the dry ingredients. Press dough firmly into lightly greased 9x13 pan. Press in chocolate chips gently. Beat egg whites until foamy. Add 1 cup brown sugar and beat until stiff. Spread over chocolate chips and top with peanuts. Bake at 350ºF for 30-35 minutes.
